Neapolitan Pasta (GF / V)

A well made Neapolitan sauce goes a long way in the kitchen – it’s something I make at least twice a month and use it on eggs, lasagna, pasta, and with roast veg. One of my all time favorites is Neapolitan sauce with pasta (GF of course), topped with fresh parsley, chili flakes, and some parmesan (if you like, I rarely go this route and mostly use vegan parmesan). Delicious and simple. For me, I can eat this every week, and know that my body is enjoying a healthy gluten free, dairy free, and meat free meal!

The below is a guide if you have already got the Neapolitan sauce in your fridge, if you’re making it fresh to go with your pasta, start the pasta when you have about 10 minutes to go on your sauce cooking time!

Neapolitan Pasta (GF / V)

Description

Neapolitan sauce with gluten free pasta, topped with fresh parsley, chili flakes, and parmesan


Ingredients

Scale
  • GF pasta (or any pasta of your choosing) 
  • 12 ladle scoops Neapolitan sause 
  • fresh chopped parsley 
  • Chili flakes 
  • Fresh parmesan, grated

Instructions

  1. If not already made, follow instructions for the Neapolitan sauce and once simmering/reducing, begin the below about 7-10 mins from sauce completion
  2. Cook your pasta according to the directions on the packet
  3. While your pasta is on the go, chop some fresh flat leaf parsley, and grate some fresh parmesan cheese (optional).
  4. Once your pasta is cooked to your liking, drain the water and return to a low heat. Spoon in one to two ladles of Neapolitan sauce and stir gently until hot.
  5. Serve in a bowl of your choosing, topping with fresh parsley, chili flakes and parmesan (all optional). Enjoy!
