Scrambled Eggs with Sprouts & Feta (DF)

Description

Dairy free feta scrabbled eggs, with alfalfa sprouts and chili flakes


Ingredients

Scale
  • 6 eggs
  • 2 slices bread – I use GF 
  • salt and pepper
  • garlic powder (optional)
  • oat milk – just a splash
  • alfalfa sprouts, handful
  • vegan feta 1/4 of a 8.1oz block
  • vegan butter, 1 tsp

Instructions

  1. Before you start, get all your ingredients out, put your bread in the toaster (do not toast yet) and put a large frying pan on the stove with a teaspoon of butter in it. 
  2. Crack 6 eggs into a bowl, add salt, pepper, a sprinkle of onion powder and a dash of milk. Whisk together with a fork until you have a smooth consistency. 
  3. Turn on your stove top as low as it can go, and while that heats up, break up your feta into a bowl (I like large chunks) and prepare your handful of sprouts (when we start the eggs, it cooks so quickly that you need to be ready with all your added ingredients). By this stage, your butter should be melted and gently starting to sizzle. Give it a whirl in the pan to cover the whole surface. You can turn up the heat slightly here if you aren’t getting a gentle simmer. 
  4. Grab your eggs and give them one last stir, and pour into the pan. Give it at least 30 seconds to a miniute to sit and heat up. Pop your toast down. 
  5. Give the eggs a gentle stir with a spatula every few seconds for the next minute or two. When it is three quarters of the way cooked, remove from the heat and add the feta and sprouts!
  6. Now return your pan to the heat and fold your ingredients into your eggs for another minute or so, and it should be ready to serve! If you like your eggs really well done, feel free to leave on the heat fro another minute or so, but I prefer a ‘just done’ texture myself! I like to top with extra sprouts and chili flakes, enjoy!

Notes

I choose to eat dairy free in my home, so Iv’e used vegan feta, butter and oat milk in this recipe. Feel free to use real feta, butter and cows milk if you prefer! For the sprouts, I find it best to use alfalfa, but if you only have other options in your fringe, it should work the same! When making your scrambled eggs, be conscious not to over-stir, keep it light and cook over a low heat! I’ve pasted links to my feta and butter below!
