Potatoes, Tomatoes and Poached Eggs (VG, GF)

Description

Leftover potatoes, paired with friend cherry tomatoes, poached eggs, goats cheese feta and fresh parsley.


Ingredients

  • 23 cooked potatoes, into 1/2 inch slices
  • 2 portions cherry tomatoes (i like 56 per portion)
  • 4 organic eggs
  • 1/2 cup goats cheese feta
  • Fresh chopped parsley (optional)
  • Chili flakes (optional)
  • Olive oil
  • Salt and pepper
  • vinegar (for poaching the eggs)

Instructions

  1. In a large non stick frying pan, fry your potatoes in some olive oil over a medium heat. They should be beautifully browned each side, around 9-10 minutes per side. You may need to do this in two batches. Set aside once done.
  2. While the potatoes brown in step 1, fry the cherry tomatoes in a smaller non stick pan on a high heat, tossing regularly, for about 7-9 minutes. Season with plenty salt and pepper once done, and set aside.
  3. Once you have completed step 2, add hot water to a small pot. Add a dash of vinegar and bring to a gentle boil. Crack your egg into a small shallow bowl, and gently slide into the water (the small bowl allows you to get closer to the bottom of the pot without dropping the egg in and breaking it). Repeat for remaining eggs. Place the lid on and let the water come back to a gentle boil, cooking for about 4-5 minutes for soft eggs. Remove from the water and set aside once ready. 
  4. To assemble, portion out your potatoes into two shallow bowls, top with your cherry tomatoes, poached eggs, crumbed goats cheese feta, salt and pepper, and fresh parsley! Quick and easy, enjoy!

Notes

Potatoes – I love to cook with potatoes, so whenever I do, I make 2 or 3 extra to fry up the next morning. I remember being a young girl having last nights potatoes served to me for brush – it’s genius really! I suppose you could do this with sweet potatoes too, the sweet flavors will work really well with the eggs/feta! Of course you can boil some potatoes specially for this dish, just add about 30-40 mins to your cooking time.

Feta – when I treat myself to feta, it’s always goats cheese. I find it better for my system, but you can go with cows feta if that works better for you. You can even use vegan feta is you want to keep this DF!

Eggs – I always go for organic pasture raised eggs, but if you don’t have access to these, just organic is the next best thing.

Extras – I went with cherry tomatoes in this dish as I LOVE them, but if tomatoes are not your thing, there’s so many other options that can work here. Avocado would be a great addition, fried mushrooms, even some bacon if pork is your thing! It’s really up to you and an easily adaptable recipe.
