Description

Sweet and crunchy spiced apple crumble!


Ingredients

Crumble

  • pinch of salt
  • 1 cup GF flour
  • 3/4 cup almond flour
  • 1/2 cup organic coconut sugar (or brown sugar)
  • 110g cold butter

Apple Bake 

  • 1 tsp cloves
  • 1 tsp all spice
  • 3/4 tsp cinnamon
  • 23 tbs sugar, depending how sweet you like it
  • 4 granny smith apples, cored, sliced into about 1/2 inch cubes

Topping

  • 1/4 cup organic rolled oats
  • 1/4 cup organic coconut sugar (or brown sugar)
  • whipped cream, ice cream, or custard (all optional)

Instructions

  1. set your oven to 365 def F.
  2. In a large bowl, toss your cored/cubed apples in the sugar, cinnamon, all spice, and cloves. Pat down into a baking dish so the surface is flat (my dish was about 2.4 inch deep, 11×7.5 inch in diameter.
  3. In a new dry bowl, add your gf flour, almond flour, sugar, and a good pinch of salt. Cut your block of cold butter into 1/2 inch cubes and add to the mixture. Use your fingers to rub the butter into the mixture creating breadcrumbs. Shake the bowl and any big bits will surface, rub them in further. You can use a food processor to pulse (don’t over pulse), but I like to use my hands.
  4. Top your apples with the crumb mix and softly flatten evenly across the surface.
  5. In a small bowl, mix your 1/4 cup sugar and 1/4 cup oats and distribute evenly over the top (optional).
  6. Put your dish on a baking tray in the oven and bake for 34-45 mins. The apples should be soft and the crumb golden.
  7. Leave to cool for 10 mins before serving, either with whipped cream, custard or ice cream.. all delicious/optional! My favorite is whipped cream, but use DF cream to keep this completely vegan.

Notes

This apple crumble is vegan and gluten free, however I did use dairy as the accompaniment – every now and then I really feel like real whipped cream! As mentioned in my intro, you can use ice cream, custard, or cream as a side for this dish, all are delicious. For the flour, I use a mix of GF and almond, but if you only have GF flour or normal wheat flour, that works too. For the sugar, I used organic coconut sugar.. but again, natural brown cane sugar will do just fine. Links to my flour and sugar below, as well as my vegan butter.
