Caramelized Onion, Corn, Poached Eggs

Description

Sweet caramelized onion and fresh corn over avocado and poached eggs


Ingredients

Scale
  • 1/2 onion, sliced 
  • 2 eggs
  • 1/2 avocado 
  • 1/4 squeeze fresh lemon 1/4
  • salt and pepper 
  • 1/3 cup sweet corn kernals
  • 23 sprigs parsley (optional)
  • tsp brown sugar – heaped
  • bread of your choosing 
  • dash of vinegar

Instructions

  1. Start by getting all of your ingredients out, and place a small frying pan on a low heat with a dash of olive oil. While that heats up, half your onion, and chop into slices (lengthways) and add to the pan. This will sauté for 8-10 mins on a low heat, stirring every 2-3 mins. 
  2. While the onions are cooking, halve your avocado and scoop it out into a bowl. Squeeze in 1/4 fresh lemon (optional) with a pinch of salt and pepper. Mash with a fork and set aside. For the sweetcorn, drain your tin of any liquid and portion out 1/3 of a cup ready to add to the onions later. Chop up your parsley and set aside. 
  3. Place a small pot of hot water on the stove and set to a medium heat, adding a dash of vinegar and covering with a lid. While that comes to a gentle boil, complete the onions by adding a heaped tsp of sugar and a dash of salt and pepper. Sauté for another 2-3 mins, finally adding your corn, parsley, and a dash of water. Let that simmer on the lowest heat in the background, stirring every 1-2 mins, but watch that it doesn’t dry out, you can turn off the heat at this point if you prefer. Now for the eggs, but first, pop your toast in!
  4. By now, your water will be boiling. Use a small shallow bowl to crack in your egg, and use it to gently slide the egg into the water. Repeat if you want a 2nd egg. Place the lid back on and let the water come back to a gentle boil. The eggs will be soft after about 3-4 mins, this is when I remove them and place on a side plate to rest. If you prefer, 4- 5 mins will give you a medium / hard yolk.
  5. To assemble, place your toast on the plate and smear with the creamy smashed avo. Top with your eggs, and lastly spoon on your caramelized onions and sweetcorn. I like to sprinkle some extra fresh chopped parsley before I eat, up to you.. enjoy!

Notes

The lower the heat, and the longer the onion can cook, the better it will caramelize. Try get this chopped up and in the pan asap, leaving all the other bits to come after. If you’re wanting less of a fulling meal, leave out the avocado and just have the caramelized onion, corn and poached eggs, it’s still just as delicious! In fact, instead of the avo I’ve used a smear of pesto on the toast, and for some reason it just works. As you can see from the pics, the portion I’ve suggested for the onion and corn is quite generous, so feel free to use a little less if needed.
