Fruit Salad with Sweetened Yogurt (V)
Growing up in South Africa, we ate a lot of fruit salad. Cool and fresh, sweet and satisfying. As I got older I started eating less fruit as it’s just not as big a craving for me, but on a recent visit to my aunts house, she made the usual fruit salad with a yogurt and sugar topping (something I had completely forgotten about). It inspired me to make this again, and I love it! This is my version… mango, blueberries and kiwi fruit salad with vegan yogurt and sugar sprinkled on top, it’s that simple! This fruit salad with sweetened yogurt is really healthy, and a delicious snack on the go!
Notes
I have used cashew yogurt for this dish, however coconut will work beautifully if you have a slightly sweeter tooth. I enjoy the bitterness of the cashew yogurt mixed with the sweetness from the fruit and sugar. Another note on the yogurt – when eating this back in SA, we used to mix the yogurt with whipped cream, Makes it SO yum… but I’ve decided to keep this dish vegan. You can also use any fruit you like, this is what I had in my fridge at the time. Sometimes, I like to go really simple and just have mango, with yogurt and sugar sprinkled on top.

Description
Fresh fruit salad with vegan yogurt, and brown sugar sprinkled on top
Ingredients
- 1/4 cup mango, diced
- 1/4 cup blueberries
- 1/2 kiwi, sliced
- 1/2 to 3/4 cup yogurt of your choosing
- 3/4 tsp brown sugar
- mint (optional)
Instructions
- Prepare your fruit and place in a serving bowl
- top with the yogurt, sprinkles of sugar, and mint – let the sugar dissolve for a few minutes before serving! Enjoy!
